The South Australian abalone aquaculture sector contains
some of the earliest pioneers of the Australian industry.
Currently there are 8 companies culturing abalone in commercial
quantities and their output ranges up to 70 tonnes per annum.
Farms have traditionally been land based but recently there
has been an increase in interest in sea based operations
with 2 significant projects recently commenced.
Output from South Australian farms is growing at a rate
greater than 30% per year.
In South Australia, the highly prized Greenlip abalone is
exclusively produced. The product is sold mostly as a frozen
whole in shell product using the Rock Salt freezing or Nitrogen
freezing methods. Some product is canned. The abalone is
harvested when it is in the size range of 80 - 95mm in length.
South Australian farmers are members of the Australian Abalone
Growers Association (AAGA).
